We have tested scanners from most major brands and found Fujitsu to b the best overall scanner for document conversion. 

There are many OCR products on the market.  We like the power and features found in OmniPage Pro.

You will need a good text editor for clean up and processing.  There are many to choose from.  I like PAD.  The program has a fantastic script library function.

In order to test your OCR results I found the resources at NANPA to be a great asset.  Here you will find area code and city codes, as well as number assignments.
